I was lucky enough to get a lunch reservation at Momofuku Seiobo when I was in Sydney. It was quite the experience! The restaurant is pretty small, situated around the open kitchen that had a wrap around bar. We were able to watch as the chefs prepared each of our courses (11 in total!) and then bring it to us themselves and explain what we are eating. They are willing to accomodate anyone with allergies (my gluten allergy was not a problem) and vegetarians too. We didn't get to see a menu until we were done with the whole meal. I would say the cuisine was a contemporary Asian fusion. Here is what we ate & some small descriptions.

Striped trumpeter (white fish) with celery & mustard
Potato, salmon roe & chicken tail
Eel dashi with turnips & fresh almonds
Onion with burnt leek & yolk
Hapuka (white fish) with grilled cucumbers & black garlic cream
Lamb with Eggplant creme and Grilled lettuce
Goat Cheese curd with Mint & Blackcurrant oils
Pear, honey cream, powdered hazelnuts & muntries
The final course was a caramel beignet with pork fat
Instead they gave me caramel mouse with pink apple granita
Stuffed after our meal!
